Italian Shrimp and Cucumber Bites
The Bay Leaf is an aromatic leaf commonly used in cooking. They are a fixture in the cooking of many European cuisines, particularly those of the Mediterranean. They add rich flocked and unique profiles to ingredients.
Ingredients:
2 Large Cucumbers Peeled to create stripes and Cut into Quarters 2 Cups Cherry Tomatoes, Quartered 1 Cup Kalamata Olives, Pitted and Quartered 1 Cup Fresh Mozzarella, Choped 1 Oz. Fresh Basil, Chopped 2 Oz. Dried Bay Leaves 8 Oz. Baby Shrimp Italian Flat Leaf Parsley, Chopped Himalayan Salt and Fresh Ground Pepper 1 Cup Extra Virgin Olive Oil First Cold Press Olive Oil
Method: Place 4 Quarts of water on high heat and bring to a boil with Bay Leaves added Place Shrimp in water for 1 or 2 minutes until pink in color and firm in texture Drain, cool and set aside Take cut cucumbers and spoon out a pocket or well at the top to accommodate filling Combine Tomatoes, Olives, Mozzarella and Basil with Olive Oil and season with Salt and Pepper to taste Place four cucumber pieces on a plate Place one Shrimp into the cavity in cucumbers, spoon wet ingredients into cavity and top with another shrimp Drizzle with additional Olive Oil and Garnish with Flat Leaf Italian Parsley Antipasto Skewers Bocconcini are little bite size mozzarella balls that get there name from the Italian word for mouth which is “Bocca”.
