Lemon and Honey Infused Mascarpone Crostini
Ingredients: 4 Slices 1” Italian Bread, cut on a Bias 4 Cloves of Garlic, peeled 3 Lemons, zested and juiced 2 Oz. Honey 8 Oz. Mascarpone Cheese 2 Oz. Fresh Basil Himalayan Salt and Fresh Ground Pepper Extra Virgin Olive Oil First Cold Press Olive Oil Italian Flat Leaf Parsley, Chopped Method: Lay bread slices on a baking sheet and drizzle olive oil on each side of the bread and toast until golden brown Cut peeled Garlic in half and rub garlic on bread Juice Lemon and mix with Mascarpone Cheese Combine Olive Oil, Honey, Lemon Zest and Basil Spread mixture on toasted Crostini and plate Top with Himalayan Salt and Fresh Ground Pepper

Fresh Bucatini con Lemone e Sopra Fina Ricotta
Ingredients:
8 Oz. Fresh Bucatini
8 Oz. Sopra Fina Ricotta
2 Oz. Fresh Mint, chopped
1 Large Lemon Zested
1 Oz. Heavy Cream
Himalayan Salt and Fresh Ground Pepper
Extra Virgin Olive Oil First Cold Press Olive Oil Italian Flat Leaf Parsley, Chopped
Method:
Bring 2 Quarts of water to a boil
In a large bowl mix your Ricotta, Mint, Lemon Zest and Heavy Cream
Add a splash of olive oil to the bottom of a medium sauté pan on low heat
Drop your fresh Bucatini and cook for 3 minutes
Take 4 Oz. (Or a healthy large spoon full) of Ricotta mixture and add to sauté pan
Season with Salt and Pepper
Drain pasta but add a splash of starchy pasta water to Ricottas mixture
Mix pasta well and plate
Garnish with Italian Flat Leaf Parsley
