My Zia Josie’s Lasagna Ingredients
**Serves 6** 24 Oz. SopraFina Ricotta / or similar (fine in texture soft and yielding)
24 Oz. Del Pastaio Ricotta / or similar (course in texture and firm)
**IMPORTANT** by blending these two types of ricotta you can achieve a very unique and balanced cheese
4 Oz. Grated Parmigiano
4 Oz. Low Moisture Part Skim Shredded Mozzarella
2 Eggs
2 pinches Black Pepperor to Taste
4 Oz. Chopped Parsley
4 Bruno’s of Brooklyn Fresh Pasta Sheets or Enough for 4 Layers
2 32 Oz. Jars of Bruno’s of Brooklyn Marinara Sauce or Meat Sauce
Method:
Combine all Ingredients in a large bowl until smooth in consistency Ladle Sauce coating the bottom of a full and deep baking pan
Layer first sheet of pasta
Place 1/4 of your Ricotta filling atop pasta sheet
Ladle more sauce on top of your Ricotta filling and blend together swirling sauce and cheese
Repeat 3 more layers
Ladle Sauce on top of last layer of pasta coating entirely
Sprinkle shredded mozzarella and grated parmigiano
Garnish with chopped parsley
Cover with Food Service Wrap first and Aluminum Foil secondly
Bake at 350 degrees for 45 minutes
Let stand for at least 60 minutes before slicing

Just as good as leftovers
Vegetarian version but can be easily offered with meat
