Italian Style Salumi Board

The Italian version of charcuterie is salumi, it is better known as affettati in Italy.

Ingredients

Hand Sliced Capicola

Hand Sliced Soppressata

Hard Cheeses

Fig Jam

Apricot Jam

Dried Apricot

Dried Figs

Pate

Galantine

Copollini

Crostini (charred bread)

Extra Virgin First Cold Press Olive Oil

Method:

Prepare a board

Brush your bread with olive oil and toast until lightly charred

Hand Slice all your cured meats, pate and galantine and place them on your board

Arrange your cheeses, dried fruits and jams

Entree

Braised Lamb Shank

Ingredients

2 12 Oz. Lamb Shank

2 Cups Flour

2 Cups Red Wine

3 Carrots Chopped

3 Celery Stalks Chopped

2 Large Onions Chopped

1/4 Lb. Fresh Rosemary Chopped

3 Oz. Fresh Garlic Minced

2 Cups Fresh Mushroom Sliced

2 Oz. Unsalted Butter

Pink Himalayan Salt and Pepper to Taste Extra Virgin First Cold Press Organic Olive Oil

Fresh Italian Flat Leaf Parsley Chopped

Method

Coat the bottom of a large sauté pan with olive oil and place on high heat

Coat your lamb shank with flour and brown on all sides

Coat the bottom of a deep baking pan

Place lamb shank, carrots, celery, onions, mushrooms, garlic and rosemary in pan

Coat with olive oil and wine

Season to taste

Roast covered for 2 hours at 350 degrees

Plate and spoon vegetables and juices over shank

Garnish with Fresh Italian Flat Leaf Parsley
